Chocolate Peanut Butter Fudge
You only need a small piece of this rich fudge to satisfy your sweet tooth. Made with peanut butter, banana and cocoa powder, these tiny treats are less than 100 calories a serving.
This recipe is diabetic friendly, gluten free and heart healthy!
Ingredients
- 1/2 cup natural peanut butter
- 1/2 large banana
- 2 tsp vanilla extract
- 2 Tbsp coconut oil
- 2 Tbsp pure maple syrup
- 2 Tbsp unsweetened cocoa powder
- 1/8 tsp salt
- 1/4 cup chopped walnuts
Preparation
- In a blender or food processor, add the peanut butter, banana, vanilla, coconut oil, maple syrup, cocoa powder, salt and walnuts, if using. Mix until very smooth.
- Lightly spray an 8 x 8 inch freezer-safe pan with nonstick cooking spray. Pour the fudge mixture into the pan.
- Cover with plastic wrap and freeze for at least 3 hours, until firm. Cut into 16 squares. Store covered and chilled.
